Question: may I connect a MacBook Air to MOVE NVR , to avoid external keyboard, display and mouse and proceeding to NVR setup ?
If yes, an Ethernet direct connection is OK ?

partially, the MOVE NVR can also be accessed and configured remotely through its web interface, so a MacBook can be used for many configuration tasks instead of permanently connecting a monitor, keyboard and mouse. The NVR documentation explicitly supports remote access via a web browser.
However, there is one important distinction: for the very first startup, the documented procedure still assumes that a monitor and input device are connected. During the first login the Admin password has to be created. Therefore I would recommend doing this initial activation locally. After that, a monitor and keyboard are normally not required for administration via the network.
A direct Ethernet connection to the MacBook is possible as well. For the NVR-8B/16B the internal LAN side uses 192.168.50.1 by default. You could therefore connect the MacBook to the NVR’s LAN port (not necessarily one of the camera PoE ports), configure the Mac Ethernet interface manually, for example:
MacBook: 192.168.50.200
Subnet mask: 255.255.255.0
NVR: 192.168.50.1
and then try to open http://192.168.50.1 in the browser.
Alternatively – and usually easier – connect the NVR WAN port to your normal router/network. The WAN interface can obtain an IP address via DHCP; connect the MacBook to the same network and open the assigned NVR IP address in the browser.
Please note that the web interface covers most, but not every, NVR function. A few settings remain available only on the local NVR interface.
